Cheese Ravioli with Lemon Butter Sauce

Pre-made cheese ravioli with a lemon butter sauce is a perfect comfort dish for a midweek slump. Especially when you top if off with a ball of burrata cheese!

You know, sometimes you just need to shut off your computer and make yourself a pretty lunch.  And I did that yesterday.  This week has been an absolute doozy so I decided to treat myself midweek.  

Although it may look like this took a long time, I was in and out of the kitchen in 10 minutes.

I used a pre-made ravioli from @traderjoes and then whipped up a super fast butter/lemon/artichoke sauce.

And topped with a ball of burrata.  Because I'm me.  And because burrata is amazing.

Ingredients for pre-made cheese ravioli with lemon butter:

  • @traderjoes Ricotta and Burrata Ravioli with Basil and Sweet Corn (found in their refrigerated section)
  • 2 cans of artichoke hearts, drained and quartered
  • Juice of 2 lemons
  • ½ cup of unsalted butter
  • Salt
  • Pepper
  • Basil leaves
  • Burrata cheese

Directions:

Prepare ravioli according to package directions (salting and oiling the water so they're seasoned and don't stick together).  **These don't take long to cook, so I prepared the sauce while I was waiting for the water to boil.

In a large saute pan, add the butter and let it begin to melt.  As it's melting, add the lemon juice and artichoke hearts.  Stir almost constantly until the butter is completely melted.  Then add a dash of salt and pepper and a sprinkling of chopped basil leaves (*I used about 6 basil leaves.).  And you're done!

Once the pasta has cooked, drain and add to the sauce mixture.  Stir, plate and top with as much burrata as you need to get you through the day.
